Patunk was illegally distilled alcohol. It had a certain popularity after WW1 because most of Shetland went dry in 1920 and alcohol was hard to get hold of. Plus the depressed state of the Shetland economy of that time meant a lot of people just couldn't afford decent alcohol.

 

Quality was variable and I heard of at least one person who went blind due to drinking poorly made hooch.
