The fish were cooked by people who were good cooks, not fancy chefs. I have been told by a local restauranteur that a seafood restauarnt in Shetland would struggle as most local customers want steak. I can usually be bribed with a decent fish supper at a decent price, but a collection of prettied up shells and goop arranged "artistically" on me plate, for much more than the supper, not so much.... Anywhere within a reasonable distance of the main road, yup fine, but if you're going to put it at Binna Ness or well in through Nesting etc, maybe not. Somewhere in Burra would make a good eatery, say that old fish factory next to the Burra garage, lovely views from there, looking down Cliftsound...
