Does anyone have a good home made bread receipe.

 

I have tried a few differant breads now but would like a good old shetland one....if anyone would like share it, I will bake a loaf and let you know how it tasted.

 

There was some very good breads at the voe show, keep up the good old home baking.

Make my own quite often. It's the only way to get decent bread around here.

 

1lb bread flour

yeast (fresh if you can get it)

375ml warm water

2 tsp sugar

1 tsp salt

1oz lard

 

mix yeast with water/sugar

wait 20 mins or so

add to flour

mix thoroughly

add salt, lard

mix again

 

Place in loaf tin or on tray (rolls)

WAIT until it has risen properly before baking.

 

A quick shortcut that I use quite often is to let my breadmaker do all the mixing. Remove the dough and let it rise above the hot water tank.

 

Some people brush the surface of the dough with milk or egg white before baking.

I prefer brushing it with a fairly strong mix of demarera sugar and water for that lovely crusty finish.

 

Best is to experiment until you find a recipe you like then stick with it.

Poppy.......i have folk queing at my door when i make bread .....i love cooking ...and am especially good at making all types of bread..

 

That sounds just like it is at mine cominoot......but can you provide a Receipe as good as the one Colin has?

 

 

If you have any sun dried tomato and rosemary ones I would send you a slice..... :D

Muppet that is a very good point!!!

 

I don't have a bread maker, always used the oven, has indeed any good bread makers used both ? I would be interested to know now that you raised the point.

 

I hope someone can answer this question, bread is not just bread its the extra special something that makes the differance, im still trying to get the right dough, but as you can see Colin has given a receipe I am going to try, so will post the answer soon.....and waiting on Cominoot to share his secrets too.... :D

Is a breadmaker as good as oven cooked bread?

 

I've never tried either but I ought to. There's just no comparison to any shop bought bread.

 

In my opinion, No.. Breadmakers give a pretty good consistent result but you can only use dried yeast. Fresh yeast is just to 'active' for the job. Only time I tried to use it the breadmaker looked like it had a hernia...

 

Also, when it comes to ovens, gas does a better job. Seems that electric ovens are to 'dry' (?)

 

Best bread I ever made was cooked in a really hot Rayburn. Crusty and awsome.

 

Not giving a lecture here but if you haven't got a breadmaker or have never made your own bread you are missing out big time..

 

It's good for you as well. No added chemicals or preservatives.

The smell of bread baking reminds me of my childhood and my father making bread and rolls through the night for our shop and wholesale orders. He would start in the evening and late-night revellers would stop by the bakehouse to get hot rolls straight out of the oven. The local police would also come in on their rounds for a cuppa and a hot roll. Once they started having a bit of a dough fight and Dad said they went out that night with flour all over their uniforms and bits of dough stuck to their hats.

 

I must admit to enjoying the ease of a breadmaker. I've got a Panasonic which has come out repeatedly tops in trials and I know of quite a number of happy Panasonic owners.

Where do you get fresh yeast from ? Can you get that in Shetland?

 

I've only managed to get dried - but I never knew where to start looking for fresh yeast.

 

The local bakers might be persuaded to part with a little from time to time but I get one of my sisters to send some up from the mainland.
